Pesarattu is a traditional Andhra dish prepared with whole green gram. It is a delicious crispy dosa or you can even call them Indian crepes.  It is a wholesome, nutritious and protein rich breakfast. High in fiber and super healthy….. packed with vitamins and minerals.They are super easy to make….just soak the lentils and rice then grind them together along with a few other ingredients.

No need of fermenting the batter. Pesaarattu is served with ginger or coconut chutney.

I use sprouted green gram which makes it even more nutritious, you could also use it directly. Also, instead of white rice or rice flour I have used brown rice which again is highly nutritious and is rich in fiber.

Pesarattu or Green Gram Dosa can be made in different ways, this is my version. In this recipe I have served the Pesarattu with raw onions along with chilly and coriander. You could also add it on the dosa and flip it so the onions gets caramelized.

Ingredients

  • 1 big onion, finely chopped

  • 1-2 green chilly, finely chopped

  • little coriander, finely chopped

  • salt to taste

  • oil/ghee

  • For Grinding
  • 1 cups green gram, sprouted

  • 1/2 cup brown rice, soaked

  • 1/2 tsp methi/fenugreek seeds

  • 2 green chilly

  • 1 tsp cumin seeds

  • 2 strings curry leaves

  • 2 tbsp coriander leaves

  • a small piece of ginger

  • pinch of turmeric

  • 3-4 pepper corns (optional)

  • water as required

Directions

  • Soak and sprout green gram. Soak brown rice with methi/fenugreek for 4-6 hours or over night
  • Drain and add all ingredients under grinding into a blender and grind into smooth paste. Add a little water.
  • Remove the batter into a bowl, add salt and mix till combined. Add water if required. The batter should be neither too thick nor too thin.
  • In another bowl mix together finely chopped onion, green chilly and coriander and keep aside.
  • Heat a skittle on medium high heat. Smear some oil and pour the batter using a ladle and spread it to a round shape
  • Cover and cook. Then add some ghee/oil on the dosa.
  • Once its done sprinkle some onion mix and fold it.
  • If you do not like raw onions, the once you spread the dosa add the onion mix, cover and cook, then add some ghee/oil and then flip the dosa for the onion to caramelize.
  • Serve this delicious crispy dosa with any kind of chutney.

Notes

  • I have added sprouted green gram for added nutrition, you can soak the lentils and grind it directly.
  • I do not recommend storing this batter as I feel it looses its taste.
  • Instead of grinding the rice you can add 2-3 tbsp of rice flour to the mixture.
