Thandai is an Indian summer cooler, popular in Northern India. It is a milk based beverage flavored with nuts and spices, which is very refreshing. Though thandai is associated with festivals like Holi and Mahashivratri, it can also be enjoyed throughout the summer months.
With flavors of cardamom, saffron, rose, nuts and spices….. this powder is versatile and can be enjoyed by both kids and adults.
Overall, this thandai powder is such a great masala to flavor milk. It adds so much flavor to regular milk and is the perfect pick me up drink to have during the summers.
Nowadays the markets are flooded with bottled Thandai and instant mixes. Not only is the taste compromised, but there are waaaaay too many preservatives, artificial flavorings, colours and unnecessary amount of sugar in them. Why bother with all of that when you can make this delicious spice mix at home in just 5 minutes!!!
Use whole fat milk to make this Thandai. You can also use fat free milk…but it tastes way better with whole fat milk.
If you want stronger flavors in your thandai, add more of peppercorns for that little heat or more of the fennel seeds for the cooling effect.
This recipe can be made in advance and refrigerated. So if you have a Holi party planned, make thandai earlier and refrigerate it so it can take in all the flavours.

Thandai Masala Mix

- For Thandai Mix Masala
1/4th cup almonds
1/4th cup cashewnuts
1/4th cup pista
1 ½tbsp fennel seeds
12-15 peppercorns
2 tbsp watermelon seeds
2 tbsp poppy seeds
10 nos cardamom
4 tbsps dried rose petals
pinch of saffron strands
1/2 tsp nutmeg powder
1/1 tsp cinnamon powder
- For Instant Thandai
2 tbsp thandai masala mix
250ml chilled whole fat milk
2 tsp sugar
Directions
- For Thandai Mix Masala
- Put all the ingredients (except for nutmeg and cinnamon powder) for the masala mix in a pan on low heat. We just need to warm them and not roast. Make sure they do not change colour. Once done remove into a plate and let it cool.
- Now add then into the blender along with nutmeg powder and cinnamon powder and dry grind. You can grind it fine or keep it a bit coarse as per your preference.
- Store the thandai masala mix in an air-tight container in a refrigerator. You can use this thandai masala mix for flavoring various other desserts.
- For Instant Thandai
- Pour some chilled whole fat milk into a blender along with the thandai mix, some sugar and blends together.
- You can now refrigerate it so it can take in all the flavours or serve it immediately topped with some pistachio and dried rose petals. . Just make sure you serve it chilled.
