Learn all the secrets of making the perfect fried rice that tastes even better than the restaurant version, and the one secret ingredient to make the best pineapple fried rice.

Generally, I used to make the regular veg, chicken or egg fried rice and never ventured into fried rice recipes with fruits. However, when we visited my sister in Hong Kong a couple of years back she got us to try this Pineapple Fried Rice after which we fell in love with it. I have made this numerous times now.

In this recipe I have used only carrots and green beans. However, feel free to use veggies of your choice…..bell pepper, corn, peas or cabbage.

You could even leave out the chicken and make it just vegetarian as well. Choice is yours!

Now for that one secret ingredient……………. its CURRY POWDER!!!!!! Strange isn’t it???????

It’s unbelievable how it not only adds a beautiful color to the rice, but it also adds so much flavor to the dish without any effort.

And here’s a nice close up of the pineapple fried rice so you can see it in all its glory! Fluffy grains of Jeera Samba rice, colourful veggies, sweet juicy pieces of pineapple all tossed in simple ingredients.


Pineapple fried rice is different from other fried rice because this is the only fried rice cooked with fruits and curry powder.

About one of the main ingredient…RICE:

  • I personally recommend using short grained Jeera Samba Rice as it is very aromatic.

Traditionally this is made with Jasmin Rice. Since Jasmin Rice is quite expensive and sometimes hard to find the best alternative is Jeera Sambal Rice.

  • Leftover rice is also ideal for fried rice as it looses moisture over time and has a dryer surface. Therefore, it is less likely to stick to the wok/pan and can be stir-fry freely over high heat.

However, if you’ve just made some steamed rice and want to make fried rice on the same day, here is what you can do:

  • Spread the rice into a thin layer in a big plate, so it cools off quickly.
  • Once the rice is cooled, cover with a cling wrap and place it in the fridge until you’re ready to use it. The rice will be ready to use in an hour or so

Pineapple Fried Rice is so substantial that it makes a perfect one-bowl main dish. It’s also a great dish for a dinner, lunch, party or a potluck because it holds up well after reheating as well.

Sweet and Spicy Pineapple Chicken Fried Rice is a quick and easy dinner or lunch recipe.

Ingredients

  • For the Chicken
  • 1 cup boneless chicken, diced

  • ½ tsp white pepper

  • 1 tbsp oil

  • Salt to taste

  • For the Rice
  • 2 cups Jeera Sambal Rice

  • 2 tbps oil

  • 8 garlic cloves, minced

  • 1 tbsp ginger, minced

  • 1 medium onion, cut into small

  • 1/4th cup carrot, cut into small

  • 1/4th cup green beans, cut into small

  • 1 cup pineapple, diced

  • 1 tsp curry powder

  • ½ tsp white pepper

  • 1/4th tsp turmeric

  • 1 tsp soya sauce

  • 1 tsp vinegar

  • Salt to taste

  • Spring onions or coriander for garnish

Directions

  • For the Chicken:
  • Heat oil in a wok/pan, add in the diced chicken. Add salt and white pepper powder. Cook the chicken till it has browned. Keep this aside.
  • For the Rice:
  • In the same wok/pan heat some more oil and add the minced ginger and garlic. Make sure the flame is high.
  • Once the garlic is slightly brown add the chopped onions and fry till the onion starts to change colour.
  • Now add in the veggies and sauté for a minute or so.
  • Then add in the pineapple and sauté for another minute or so.
  • Then add soya sauce, vinegar, curry powder, white pepper powder and mix well.
  • Now lower the flame and add the cooked rice and mix well, add turmeric, salt and mix all the ingredients well. (you can add the turmeric in the previous step. Just that I missed adding it then so added it at this stage.).
  • Finally add in the chicken and combine all of it. Turn off the flame and serve hot!

Notes

  • In this recipe I have used curry powder which gives a great flavor to the fried rice. However, if you unable to get one you can add some ½ tsp cumin powder and ½ tsp coriander powder instead.
  • Fried Rice is best made with old rice. However, if using fresh rice, once it is cooked spread it out on a plate and let it cool down for at least an hour. After that just cover with a cling wrap and place it in the refrigerator until you ready to use.
  • You can increase or decrease the quantity of the ingredients according to your taste.
  • You can also add minced green chillies/birds eye chillies along with the veggies if you like it spicier.
