“Overnight French Toast with Berries” is an absolutely easy breakfast that can be made the previous night, refrigerated and baked in the morning. This is a prefect breakfast to make when you want to just enjoy and relax on a Sunday morning with family instead of spending your time in the kitchen.

This make-ahead breakfast casserole takes just 15 minutes to prepare and refrigerate the night before….a perfect breakfast for Christmas morning!! You can put the casserole in the oven and enjoy your Christmas morning with your family….you’ll have a delicious homemade breakfast ready…how amazing is that!!!!!!
Using French Bread, allows the milk and egg mixture to soak in overnight, so when you bake, the top gets crispy. The traditional bread would not work here as once it is soaked in the mixture it will get all soggy. Also, you can go with any kind of berries of your choice…I was able to get my hands on only strawberries and blue berries, hence just these. Actually you can even totally skip adding the berries, instead add apples……in fact you can even leave out the fruits and add nuts instead. Absolutely your choice as to how you want it. Just that I personally like adding berries as they give a slight tanginess to the casserole.
I like my casserole cooked completely. However if you want it a little gooey then remove it about 15minutes earlier.
Although the casserole tastes delicious as it is, you can add a few extra toppings like…
- maple syrup
- honey
- powdered sugar
- more of fresh berries
This casserole can be re-heated as well. The chunks of bread on the top will gradually lose crunch. The best way to reheat it is to bake it in the oven at 180C for 10 to 15 minutes to warm the casserole and re-crisp the top.

Baked French Toast with Berries

Ingredients
1 French bread
- For the custard
1 cup milk
3/4 tsp cinnamon powder
3 eggs
1/2 cup brown sugar
pinch of salt
- For the topping
1/2 cup salted butter
1/2 cup all purpose flour
1/2 cup brown sugar
1 cup mixed berries
Directions
- Cut the French bread into cubes and layer them into a 9*9” casserole dish that is lined with parchment paper.
- For the custard….Beat the milk, eggs, brown sugar, cinnamon and salt in a bowl.
- Pour it evenly on the bread making sure to cover every bit
- Cover it with a foil and refrigerate it over night or a minimum of 3 hours
- For the topping….mix together flour, brown sugar and butter with a fork or just your hands to make crumbs and refrigerate it in a zip lock or an airtight container.
- Next morning when ready to bake, take the dish out of the refrigerator 20 minutes before baking (if it has been in overnight) to get the chill out.
- Pre-heat the over at 180C. Top the casserole with the topping mix and then arrange the berries on it.
- Bake it covered for about 40-45 mins and uncover and bake further for 10 minutes.
- Serve this warm with some more berries and maple syrup
