Mushroom Soup

Ingredients
150 grms mushroom
1 tbsp butter
1 tsp oil
1 onion, finely cut
1 tbsp garlic, minced
Few coriander stem
½ cup vegetable stock (or chicken stock), you can also use 1 stock cube
1 tbsp flour/maida
½ tsp pepper
1 tsp fresh thyme (or dried)
Salt to taste
Directions
- Melt some butter and oil in a soup pot.
- Add onions and saute till golden brown
- Then add some garlic and a few coriander stems and saute for a minute.
- Add the mushroom and saute well till the water from the mushroom dries up and it changes color.
- Sprinkle some flour/maida and mix well.
- Then add vegetable stock and some water. In this recipe I have used homemade vegetable stock. You can use store bought stock or even stock cubes.
- Add in the fresh thyme, pepper, salt (stock contains salt so, check before adding salt) and bring the mixture to a boil.
- Cool this mixture and add into a blender (do in batches if required) and blend until completely smooth.
- Return the mixture into a pot and bring to simmer until soup is hot. At this point adjust the consistency by adding water.
- Serve immediately.
