This mushroom soup recipe is so easy to make and is as cozy as it gets.

Ingredients

  • 150 grms mushroom

  • 1 tbsp butter

  • 1 tsp oil

  • 1 onion, finely cut

  • 1 tbsp garlic, minced

  • Few coriander stem

  • ½ cup vegetable stock (or chicken stock), you can also use 1 stock cube

  • 1 tbsp flour/maida

  • ½ tsp pepper

  • 1 tsp fresh thyme (or dried)

  • Salt to taste

Directions

  • Melt some butter and oil in a soup pot.
  • Add onions and saute till golden brown
  • Then add some garlic and a few coriander stems and saute for a minute.
  • Add the mushroom and saute well till the water from the mushroom dries up and it changes color.
  • Sprinkle some flour/maida and mix well.
  • Then add vegetable stock and some water. In this recipe I have used homemade vegetable stock. You can use store bought stock or even stock cubes.
  • Add in the fresh thyme, pepper, salt (stock contains salt so, check before adding salt) and bring the mixture to a boil.
  • Cool this mixture and add into a blender (do in batches if required) and blend until completely smooth.
  • Return the mixture into a pot and bring to simmer until soup is hot. At this point adjust the consistency by adding water.
  • Serve immediately.
