Grilled Fish with Coriander Lemon Butter

When it comes to grilled sea food I like to keep it simple. And this recipe is exactly that. Basic ingredients that is readily available in the kitchen.

This recipe is the simplest and best way to grill just about any firm fish and is really tasty and a different way to enjoy fish.

I love watching how the cold coriander lemon butter melts on the hot grilled fish….. and when you take a bite of this there is a burst of flavours , this is so heavenly. This recipe adds a totally different dimension to your meal experience.

In this recipe I have used Basa Fish, however you can use any kind of boneless fish of your choice.

Go ahead and try this lip-smacking delight right away!

Easy and simple pan grilled basa fish topped with coriander lemon butter.

Ingredients

  • For coriander lemon butter
  • Few strings of fresh coriander, cut into fine

  • 3-4 tbsp butter

  • 1/2 tsp crushed pepper corns

  • 1 big lemon

  • salt to taste

  • 1/2 tsp lemon rind

  • For the fish
  • 2 basa fish fillets

  • 1 tsp crushed pepper corns

  • salt to taste

  • 2-3 tbsp olive oil

Directions

  • To make coriander lemon butter
  • In a bowl mix together butter, finely chopped coriander, crushed pepper corns, lemon rind and juice of 1 lemon.
  • Place the prepared butter on an aluminum sheet and roll into a log and fold the edges. Refrigerate till it has set.
  • Once it is completely set remove and cut it in rounds and keep aside. Preferably in the refrigerator just to avoid it from becoming soft. (sorry, forgot to take a picture after I cut them).

  • Now for the fish
  • Place the fish fillets in a plate and marinate it with some salt and crushed pepper corns.
  • Heat some olive oil in a pan and place the marinated fish and cook both sides till it is completely cooked and browned on both the sides. .
  • Now gently remove the fish from the pan onto a serving plate and top with the coriander lemon butter dollops. Serve immediately. Enjoy!
