Quick 15 minute fresh and crunchy carrot ribbon salad with sweet and tangy dressing. Perfect appetizer or side with your lunch or dinner.

If you struggle to get veggies into your diet, then this salad is for you.

The carrot ribbons make a nice texture and are just a different way to experience eating carrots.

All you need is a vegetable peeler, and the simple list of ingredients. Here’s how to make this yummy chilled salad.

Cut the stem ends off, then use a vegetable peeler to peel the carrots (discard the outer peel). Carefully run the vegetable peeler on the entire length of each carrot, creating long thin ribbons. After which you add in the salad dressing. Using salad spoon or forks coat the ribbons with the dressing.

At this point, the carrot ribbon salad can be served, however it tastes even better if covered and refrigerated for at least 30 minutes. before serving.

Ingredients

  • 3-4 medium sized carrots

  • 1 tbsp extra virgin olive oil

  • 1 tbsp tamari/soya sauce

  • 1 tsp apple cider vinegar

  • 1 tsp honey/maple syrup

  • salt to taste

  • 1/2 lemon

  • 1 tsp sesame seeds

  • finely chopped coriander leaves

Directions

  • Using a vegetable peeler and make long strips of the carrot.
  • Into these carrot ribbons add the olive oil, tamari (or soya sauce), apple cider vinegar, honey, lime juice, salt, sesame seeds and coriander leaves.
  • Using a salad spoon or a fork toss well to coat the dressing on the ribbons.
  • At this point, the carrot ribbon salad can be served, however it tastes even better if covered and refrigerated for at least 30 minutes before serving..

Notes

  • Make sure to use fiem carrots.
  • Do not skip the vinegar as it makes the ribbons tender yet keeping it crunchy.
  • Adding crushed peanuts enhances the flavour of this salad. however since I did not have it handy I had to skip.
  • If you are pre making the salad just keep the ribbons and dressing separately till ready yo serve.
