This classic Broccoli Soup recipe is a delicious, comforting soup that can be enjoyed for lunch or dinner.

Ingredients

  • 100 grms broccoli

  • 8-10 shallots/1 small onion

  • 1 bay leaf

  • salt to taste

  • 1 cup water

  • 1 tsp oil

  • 1 tsp minced garlic

  • ½ tsp chilli flakes

  • ½ tsp crushed pepper

  • 1 tbsp coconut milk (optional)

Directions

  • Into a saucepan add broccoli, shallots or a small onion, bay leaf, salt, water and boil for 10-12 mins or till the broccoli is soft, on medium to low flame.
  • Let this mixture cool and then blend into a smooth puree using the sock from the boiled veggies.
  • Heat some oil in a pan, add in the garlic and sauté till slightly brown
  • Pour the broccoli puree and mix well.
  • Add in some chilli flakes, coarsely ground pepper and coconut milk (optional) and mix well.
  • Add more water and adjust the consistency if required. Serve hot!
