A simple, light and flavorful salad, this Asian Cucumber Salad is the perfect side dish for your next BBQ party! With a light and easy to make sauce, this healthy cucumber salad recipe is sure to please everyone.

Asian Cucumber Salad is super easy to make and can be pulled together in just 10 minutes .  All you need to do is slice the cucumbers and then dress with a simple dressing. Even my daughter could make this…..it’s that simple!

Another great thing about this cucumber salad is that you can make it few hours ahead.  Most salads have to be eaten immediately, but this salad actually benefits from a few hours of marinating.  If not eating right away, just cover and put in a refrigerator, so the dressing will truly permeate the cucumber slices…Yum Yum Yum!!!!!

You can use any kind of cucumber you have on hand. For this recipe I used English cucumbers.

You can peel the skin of the cucumber however I don’t quite recommend that. Reason being, the skin helps to make a crunchier salad and it also makes the salad look better! Also, the skin and seeds of a cucumber are the most nutritious part of the vegetable. They contain fiber and is a powerful antioxidant.

This Asian cucumber salad is the perfect light and refreshing side dish that can be paired with any meat for your of your choice.

Asian Cucumber Salad

Ingredients

  • 2 cucumbers

  • 1 small onion, thinly sliced

  • 1 tbsp spring onion (optional)

  • salt to taste

  • For dressing
  • 2-3 clove garlic, minced

  • 1/2 tsp chilly flakes

  • 1 tsp sesame seeds, roasted

  • 1 tbsp cilantro

  • 2 tbsp soya sauce

  • 1 tsp apple cider vinegar

  • 1/2 tsp brown/white sugar

  • 1 tsp olive/sesame oil

Directions

  • Slice the cucumbers, add salt to the them, stir gently to combine well. Chill in the refrigerator for 15 minutes.
  • Combine the garlic, chilly flakes, sesame seeds, cilantro, soya sauce, vinegar, brown sugar and oil and mix well. Make sure that the sugar is completely dissolved
  • Now drain the salt water from the cucumber add in the sliced onions, spring onion and the dressing and toss well..
  • Serve immediately or cover and refrigerate for later.
