This spicy and tangy brinjal curry is very easy to prepare. Any veggie lover will adore this curry for its taste. It even goes really well with chapati, roti, pulao and plain rice as well .

So if you are making biryani the next time don’t forget to try this super easy and delicious brinjal curry. This Salan/Curry adds to the taste of any kind of biryani.

An awesome combination for any biryani, both vegetarian and non-vegetarian. This mouth watering gravy is a must accompaniment for biryani.

Ingredients

  • 5-6 brinjal

  • ½ tsp mustard seeds

  • 1/4th tsp pepper corns

  • 1 medium onion, paste

  • 1 tsp ginger garlic paste

  • 2 big tomatoes, pureed

  • 1/4th tsp turmeric powder

  • 1tsp Kashmiri chili powder

  • 3 tbsp tamarind pulp

  • 1 tsp jaggery

  • 2-3 tbsp oil

  • Salt to taste

Directions

  • Cut the brinjal lengthwise. Heat oil in a cooker and add in the brinjal and toss till it starts to change colour. Remove and keep aside.
  • Into the same oil add in the mustard and pepper corns, once they start to splutter add in the onion paste and fry till it starts to change colour.
  • Add in the ginger garlic paste and fry till the raw smell goes, this may take about a minute or two.
  • Now add the tomato puree and mix well.
  • Once all combined add in the turmeric powder, kashmiri chilli powder and salt. Let it cook for a while.
  • Then add the tamarind pulp and jaggery, mix all and cook for about a minute.
  • Finally add the fried brinjal slices, give it a good mix. Cover the cooker and let it cook for about 2-3 whistles.
  • Wait for the pressure to release. You can now serve this Brinjal Salan/Curry with biryani, roti, chapati, pulao or just plain rice.

Notes

  • You can increase the quantity of chill powder if you want it more spicy.
  • Adding jaggery balances the tangy and spiciness of this dish.
