These delicious Chicken Patties are crispy from outside….. juicy and cheesy from inside. It is an innovative way to use leftover chicken. In this recipe I have used chicken fillets as I did not have any leftovers.

Serve this for dinner with crusty bread slathered with butter and some coleslaw may be. Or put out a platter with a dipping sauce as a starter, you can even use them to make sliders or burgers…. I have them even as a tea time snack.

The reasons I love these fritters are because of its simplicity. But that doesn’t mean there is compromise in flavor or taste. The ingredients for these chicken patties are easily available which makes them so easy to make.

Lemon zest and the dill leaves completely transforms these patties, so try not to skip them. Do try this easy peasy Chicken Patties and let me know how you liked them.

These delicious Chicken Patties are crispy from outside….. juicy and cheesy from inside. It is an innovative way to use leftover chicken.

Ingredients

  • 2 chicken fillets/2 cups of shredded chicken

  • 2 eggs

  • 1/3 cup mayonnaise

  • 1/3 cup all purpose flour

  • 3 tbsp fresh dill leaves

  • 1/2 tsp black pepper

  • 1 tsp lemon zest

  • 1½ cups shredded mozzarella cheese

  • salt to taste

  • bread crumbs for coating the patties

  • oil for shallow frying the patties

Directions

  • Firstly shred the chicken and keep aside. If using chicken fillets cook them, and shred them once they come to room temperature.
  • In a bowl mix together, eggs, mayonnaise, flour, lemon zest, dill leaves, pepper and salt.
  • Add in the shredded chicken and mozzarella cheese and mix till all is combined
  • Cover this with a cling wrap and refrigerate for about 30 minutes.
  • Using an ice cream scoop divide the mixture into small balls.
  • Then dip each of them into the bread crumbs and shape them into round patties.
  • Heat some oil in a skittle and shallow fry the chicken patties. Sauté them on medium to low heat for about 2 minutes or so on each side until golden brown. Repeat the same with all the patties.
  • As soon as the patties are off the skittle sprinkle some salt, chopped dill leaves and squeeze lime over the patties. Serve hot or warm.

Notes

  • In this recipe I have used eggless mayonnaise, however any kind of mayonnaise can be used. Depending on the mayonnaise the flavours may slightly change.
  • These chicken patties can be made with any kind of leftover chicken.
  • The patties can be frozen before being cooked, however thaw in room temperature for about hour or so before frying them.
