This popular Chinese style chicken is often found in the Chinese restaurant menus…. Schezwan Chicken is a delicious and flavorful dish made by tossing the chicken in a spicy and sour sauce.

Well Schezwan Chicken is generally quite spicy, however in this recipe I have toned down the spice levels. You can just double or triple the chilly or the chilly paste to get a spicier version.

Ingredients

  • For Deep Frying
  • 500 gms Chicken Fillets

  • 1 tsp Ginger Garlic Paste

  • 1 tsp Dark Soya Sauce

  • 1 Egg

  • 2-3 tbsp Cornflour

  • 1 tbsp Plain Flour

  • Oil for Frying

  • For Sauce
  • 3 tbsp spring onion greens, chopped

  • 3 tbsp garlic, chopped

  • 1 green chilly, chopped

  • 3-4 whole dry red chillies, cut into small

  • 1 tbsp red chilly paste (see notes)

  • 1 onion, chopped

  • 11/2 tbsp tomato ketchup

  • 1 tsp dark soya sauce

  • 1 tsp vinegar

  • ½ tsp sugar, optional

  • ½ cup water

  • 1 tsp cornflour

  • Salt to taste

  • For garnish
  • 2 tbsp spring onion

Directions

  • Cut the chicken fillets into strips. Make the marinade with the ingredients mentioned under “deep frying” and add the chicken strips and mix well so the chicken pieces are well coated. Let it rest for about half hour.
  • Heat oil in a wok and fry the chicken pieces in batches till crispy and golden brown.
  • Now to make the sauce, transfer the oil from the wok in which the chicken was fried. Except for about 3 tbsp of oil. Add in the chopped garlic and the onion greens and saute till fragrant. Then add in the chopped green chilly and dry red chilly and fry for about half a minute.
  • Add in the onions and saute till transparent.
  • Now add the red chilly paste, and fry for about a minute.
  • Meanwhile mix together, soya sauce, tomato ketchup, sugar and vinegar in a small saucer and add this to the wok.
  • Add ½ cup of water and let it come to a boil.
  • Mix some cornflour with a little bit of water and add this to the sauce, mix and immediately add the fried chicken strips and mix well till the entire chicken in coated with the sauce.
  • Garnish with spring onions.

Notes

  • Red Chilly paste can be made by soaking the dry red chillies in hot water for a while and grinding them to fine paste.
