Corn Cheese Toast is an easy and mouth-watering recipes using cheese, corn, bread and some seasoning. Perfect for breakfast or kids snacks. It’s a mixture of corn, capsicum in a light white sauce baked on the slices of bread.

I have made the white sauce using flour, cheese, herbs and some veggies, that not just make the dish unique and irresistible, but also make the meal filling.
You can even add other veggies like broccoli and carrots to add more of a variety, sprinkling more herbs and spices on the top.

In this recipe I have used an oven. However, you can also make it on a pan. Just toast the bread on a pan and then spoon a generous amount of the sauce mixture and spread it on the bread slices and serve immediately.

Ingredients

  • 8 slices multigrain bread/any bread

  • 1/2 cup capsicum, cut into small

  • 1 cup sweet corn

  • For Sauce
  • 1 tbsp butter

  • 1 tsp garlic, minced

  • 2 tbsp flour

  • 1/2+1/4 cup milk

  • 1/4 tsp black pepper

  • 1/4 tsp chilly flakes

  • 1/2 tsp mixed herb

  • salt to taste

  • 1 cube cheese

Directions

  • Pre heat the oven at 180C.
  • Keep bread slices in the oven to toast…..just till they are light brown.
  • Heat a skittle and add butter, once it starts to melt add the minced garlic (do not let it brown).
  • Add the flour and mix well.
  • Add the milk little by little and whisk till smooth.

  • Add in the mixed herb, chilly flakes, pepper, salt and combine.
  • Now turn off the flame add in the cheese and mix till it melts.
  • Add in the veggies.
  • Top the bread with the mixture and place it in the oven again for about 2 minutes.
  • Serve immediately with some ketchup.

Notes

  • You can even toast the bread in a toaster or a pan.
  • Any kind of cheese can be used for this recipe.
  • I have used frozen sweet corn, you can use fresh corn as well.
  • You can add absolutely any other veggies of your choice,
  • This stuffing can also be used to make sandwich filling.
  • I have used multi grain bread, you can however use any kind of bread.
